INGREDIENTS

For Tomato & Onion Relish:

  • 2 medium tomato chopped

  • 2 tablespoons lemon juice

For Crust:

INGREDIENTS

  • 1/2 ounce Cointreau
  • 1 1/2 ounce freshly-squeezed orange juice
  • 3 1/2 ounce chilled champagne (Brut)

Prep:

Pour the triple sec into a champagne flute, followed by pouring in the orange juice slowly, letting it stir the triple sec. Pour in the champagne slowly, letting it stir the orange juice and triple sec mixture. Optionally, garnish with an orange slice.

  • 3–4 tablespoons olive oil, divided

  • Blender Hollandaise Sauce

    • 12 ounces Prosciutto

For Poached Eggs:

  • 2 quarts (8 cups) cold water
  • 2 tablespoons Distilled White Vinegar
  • 12 Large Grade A Brown Eggs

For Hollandaise Sauce:

  • 3 Large Grade A Brown Egg Yolks
  • 1 heaping teaspoon Dijon Mustard
  • 1/2 lemon, juiced (1 heaping tablespoon)
  • 8–10 tablespoons Unsalted Butter, melted
  • 1 teaspoon kosher salt
  • Optional: 1/4-1/2 teaspoon cayenne pepper or 1 teaspoon hot sauce of choice

INGREDIENTS

  • 2 1/2 oz. vodka 
  • 3/4 c. tomato juice
  • 2 tbsp. lemon juice

  • 2 dashes hot sauce (optional)
  • 1/4 tsp. prepared horseradish
  • 1 pinch celery salt
  • 1 pinch black pepper

For Garnish:

  • Leafy celery stalks

  • Chopped pickle spears
  • Cherry tomatoes
  • Green olives

Prep:

Combine the vodka, tomato juice, lemon juice, Worcestershire sauce, hot sauce (if using), horseradish, celery salt, and black pepper in a tall glass. Stir well to combine.
